How far off is too far off for oven temperature?

Check, in this order

Why one glance misleads
An oven never sits still at its setting: it overshoots, the heat cuts out, it sags, the heat returns. One reading can land well off the true average.
That is why Viking’s free-standing gas range service manual averages the third to fifth cycles and leans warm: 15°F under, 25°F over. Its convection check drops the setting to 325°F with the fan running.
Stop and call if

Does that band apply to every Viking oven?
